Webisode: Kale & Coconut Smoothie


My friend Joanna told me about a Kale and Coconut Smoothie she had been buying several mornings a week from a health food store in Silver Lake. She was becoming addicted to how good it made her feel and look (she reported glowing skin), but not so excited about the shake’s hefty price-tag. After tasting the verdant green drink for myself, I became hooked and decided to try my hand at recreating it at home. The result was pretty right on. Most of these ingredients should be available at your local grocery store (all are available at Whole Foods). If you can’t find coconut meat, either omit it or substitute with dried, unsweetened coconut flakes.

Kale and Coconut Smoothie  

Serves 2

1 heaping cup of kale, stems removed and roughly chopped
1 cup coconut water
1 banana
½ cup coconut meat, roughly chopped
1 teaspoon agave
a pinch of cinnamon
1 cup of ice (add more or less depending on your taste)

Place ingredients in the blender and blend until smooth, for at least a minute.

O.k. so I can't stomach coconut water and my husband loves the stuff. I'm thinking that the kale and coconut meat will help here. I'm absolutely trying this later this week. Great webisode, lady.

@estelle! you can also use coconut milk (not from the can - rather from a cartoon or box)!

thank you for doing this! after joanna posted it on instagram a while back, i went out and got all the ingredients. even hacked a coconut in half with a hammer. i stomach it better (is that even a phrase? anyhoo....) by adding some dates and more cinnamon. bottoms up! (ps: my 5 yr old is OBSESSED with you and your "cooking shows".)

Yay! I've been waiting for this one :) This looks like a nice alternative to my usual morning green juice (kale, apple, lemon, celery, ginger). I can't wait to try it!

Looks delicious! If you want your smoothie a bit more creamy, try freezing the banana.

So excited to see your version. I have been obsessed with this shake for eons and tried with my vitamix to recreate it but it is never as creamy and delicious. Thank you for giving us your lovely version. One tip, I think if you use "young coconut meat" not regular coconut meat than you will get a much richer and creamier smoothie. I am pretty sure that's what they use there because I have watched closely. You want to use the same meat from the young coconuts that produce the coconut water.

Does this hold through the morning? Curious. We fix protein drinks and they usually hold us for a few hours. Trying this, nonetheless. So healthy!

i am obsessed with coconut water and i love the idea of adding some healthy green. kale is hard to find here in Germany outside of winter, but i will certainly try this with spinach instead. thanks for more culinary inspiration!

I just made this smoothie and I LOVE IT! I had to use coconut milk though since I didn't have any coconut water on hand. Next time I try it with coconut water and see how I like it. I just started the Eat to Live plan by Dr. Joel Fuhrman and this is right in line with his eating plan!! Thanks and I'm excited to start eating healthier!
